Description Parmigiano Reggiano. The king of Italian cheese.. but some are better than others. The Cravero family has specialised in maturing Parmigiano in Bra since 1855. This rare two year old ‘mountain’ cheese has impeccable regional provenance. Handmade in the Appennini Hills with the raw milk of a small herd of less than 100 cows. The finest cheeses are selected by Giorgio and taken to Bra for ripening. At two years its texture is moist and succulent, with complex fruity, caramel, milky sweet notes. This delightful reggiano is also rich with tyrosine or rather those little crystallised bites of crunch that we love. An exceptional cheese.
