Description Cornish Kern is a modern British hard cheese made by the Lynher Family in West Cornwall. Inspired by the traditional Gouda recipe, its name ‘Kern’ is the Cornish word for ’round’ and suitably describes its shape and flavour. Its thin black coat of black wax allows the cheese to be matured for 16months without losing moisture. Its texture is dense and fudgey with an intense savoury flavour with beautiful lingering caramel sweetness.
