Description Vana (C-Grade) is uni that doesn’t fall into a Gold or Premium category. It is dark yellow or orange, or may even appear brown in color. The uni pieces may be intact but are mostly broken and ultra-soft texture. For these reasons, vana is not recommended for sushi presentations. Vana may still be, and often is, enjoyed raw. It offers a slightly bitter, almost nutty flavor. Because of its melty consistency, chefs often use it in pastas, soups, and sauces as a thickener and to create desirable umami flavor. Please note that we are now selling this item frozen in block form rather than in a plastic tub. Once defrosted, transfer to a sealable container.
