This one is my favorite, and I always have multiples in my pantry. I usually take the leftovers from a rotisserie chicken and use them in this soup the next day. It’s a tasty way to use leftovers and makes my life easier because any time I plan a chicken dinner, I’ve actually got plans for two dinners!
